These Chucks are simply amazing. I've yet to be patient enough to let one cook as a pot roast, but I start carving at 125 and hold them at med rare.

A Norwegian from Wisconsin, Scott missed brats in the summer so much and I missed Italian when we gave up pork. These are delicious, still tastes like the brats we remember and perfect for my sauerkraut. Scott just likes ketchup lol. Norwegians.
